A best friend's wedding

My good friend Jenny is *not* a cake person. So, I was none too surprised when she told me she would be doing an ice cream bar at her wedding at the Carolina Inn in December. What did surprise me, though, was the exorbitant cost of an ice cream bar! This came as a surprise to Jen, too. So, when she asked for my advice, I suggested a number of bakeries in the area - and of course plugged my own name! It was such an honor when Jenny and Brett decided to work with me to design the cake of their dreams.

The theme was black & white, so we decided on a very classic design. A 4-tier square cake, with each tier adorned with a very thin black ribbon along the bottom. We also agreed on using gumpaste anenomes for some extra flair and visual appeal. I had never worked with gumpaste before, so to cover our bases, we first made sure that you can buy them - there are a number of etsy shops that do sell anenomes, so I felt better selecting the cake design knowing that if worst came to worst, we would be covered. But then, it was time to try my hand at the flowers:

I was thrilled with how my first attempts with gumpaste had turned out, and thankfully, so were Jenny and Brett.

Next, it was time to decide on the flavors. At our tasting, we tried vanilla bean (no plain vanilla for them!), chocolate, hummingbird, and spice cake. We decided on the vanilla bean and chocolate, but how to personalize them? And what about a third flavor?

The chocolate was easy. Knowing Jenny's love for Oreo cookies, I recommended an oreo buttercream filling in between the tiers. Sold!

The third flavor was a little trickier. We wanted something a little unique (to balance out the plainer vanilla bean and chocolate), as well as something seasonal for a December wedding. Not knowing Brett as well as I know Jen, I made the *lucky* suggestion of white chocolate peppermint - two flavors that just happen to be Brett's favorites. Perfect! Now, I didn't have a recipe for white chocolate peppermint cake, but creating one was easy as pie (or as cake?), and it turned out to be AMAZING. It was definitely my favorite of the 3 flavors. And, I mixed crushed candy canes with buttercream to put in between the layers, which just added something extra, in addition to being seasonally appropriate!

All in all, this was an amazing experience. The wedding was amazing, and the cake process offered many wonderful learning opportunities:

I learned all about gumpaste
I spent a Friday night and Saturday morning (truly through the night on Friday!) with an L-square ruler, bubble level, and huge knife leveling cakes (my dad was very proud)
I learned that my 2-door VW Cabrio CAN fit cake for 230 (in separate boxes, of course)
I hammered my first dowel through a cake

And, here's the final product:

But, the best part of all of this was that even the non-cake eating bride said, "It was more than amazing!!!!! Loved every inch (and bite) of it! :) Thank you!!!!"

Boy, am I wiped out!

CupcakeCamp Charleston was a blast today. Met a lot of great local bakers, local artists, and the organizer for CupcakeCamp Phoenix!!!

What a tiring day, though. Setting up, transporting, re-setting up, and re-filling 300 cupcakes will really take its toll on you. I could not have done it without the organizational and directional skills of my good friend and baker's assistant, Ronii Bartles of Bartles & Associates. She made sure I had everything I needed and was all set up for the day's activities!

No, not a bee... A bug! A grasshopper, to be exact.

Exactly one year ago, I made this ladybug picnic cake / cake pop combo for the lovely Harper, who was turning 4. Well, little Harper really loves her bugs, because this year for her birthday, she requested a grasshopper cake! And, not only does she love bugs, but she has fantastic taste. Her request was not your standard chocolate cake with white frosting. Nope. She wanted a spice cake! I admire her sophistication at such a young age.

We've been busy over here at Caketacular. I'm in Charleston this week for CupcakeCamp Charleston, which is sure to be a spectacular, caketacular time! 2 hours of unlimited cupcakes at a fancy hotel in gorgeous Charleston? Why not!?

We're also gearing up for the holiday season. Halloween is behind us - pictures of Halloween cake pops to come soon. Next, it's time to start thinking about Thanksgiving. Turkey cake pops, anyone? What about pilgrim hats?

Then, the wedding for my lovely friends Jenny & Brett in December. This is going to be a big one, folks.

This was a ridiculously fun project, as well. This was my first time working with flow icing, and I think I will do it again, when appropriate. It was much easier to do the stars with flow icing than it would have been with the melted candy coating.

A wedding for... 285!

This was the biggest event I have done to date, which is very exciting. A friend from high school got married recently, and was looking for a beautiful arrangement for their rather formal and large wedding reception. We decided on a tiramisu cutting cake, with an arrangement of 270 cupcakes. The cupcakes followed the wedding colors, and were arranged in a gradient from very pale lavender to a darker purple color. I also incorporated their theme of origami paper cranes into the cake and cupcake display.

Also, for the "groom's cake," we did cupcakes modeled after the aliens from Toy Story, the groom's favorite movie.

A former colleague of mine contacted me recently, as her father was getting re-married, and wanted a casual but delicious cake arrangement for the wedding celebration. We decided on a cupcake tier with a 2-layer cutting cake. The flavors were vanilla, lemon, and almond, with an almond cutting cake.

I had a lot of fun doing these Christmas tree cake pops. One of the biggest challenges is to get the candy coating nice and smooth - which is part of why these were so fun to do! Christmas trees are not supposed to be smooth at all!

It was also fun to come up with the different styles of decorations for each cake pop.

A Carolina-themed wedding rehearsal

My friends Tristan and Miranda gave me the ultimate compliment back in the Spring of 2009 by asking me to make the cake for their wedding rehearsal. They were actually the first folks to ever ask me to do a project for them!

Tristan and Miranda first met their freshman year at UNC back in 2000. They became very close friends, and ultimately started dating in 2006. Tristan proposed to Miranda on November 14, 2008, and they set their wedding date for exactly a year later, on November 14, 2009. I was so excited to be invited to the wedding to begin with, and then, when they asked me to do the cake for their rehearsal dinner, I became even more excited!

We decided that since they met at UNC, a Carolina-themed cake would be both fun and totally appropriate. The cake needed to feed 50-60, so we decided on an 8-inch square 2-layer cake, topped with a 6-inch square 2-layer cake. Each tier was to have a Carolina-blue and navy-blue argyle pattern on the sides. We then decided to include the Old Well on the top of the top tier, with the wedding date printed on the "apron" of the well.

So, I started with the argyle pattern. I thought a frozen buttercream transfer would be the best approach - I could make it a few days ahead of time, and the diamonds would be smoother than if I piped them onto the cake directly. So, I printed out the argyle pattern, taped it to a cookie sheet, then covered the pattern with wax paper. I then used white and tinted buttercream icing to pipe the argyle pattern:

Wedding #1!

I was fortunate enough to be able to do the baking for a wedding in August, thanks to Andrew and Kelly! We decided on a variety of cupcakes in 3 flavors, with a top tier cutting cake. For a more traditional look and some consistency between the cupcakes and the cutting cake, I decorated each cupcake as a rose, then used royal icing roses to decorate the cutting cake. It turned out wonderfully! And was so fun to do!

The three cupcake flavors were chocolate, vanilla, and hummingbird. Hummingbird cake is a traditional southern cake with bananas and pineapple - very similar to a banana bread, but much "cake-ier."

So, I had a lot of blackberries this week, so I wanted to make some blackberry pie. But not a conventional pie...

Enter pie pops!

And pie pockets!

The pie pop idea is, sadly, not mine, but was stolen from Luxirare and Bakerella. They are super duper easy to do, although you have to be careful not to put too much filling in them. About half of mine were useless, because so much filling leaked out.

The pocket pie molds are from Williams-Sonoma.

Louis Vuitton cake

My friend issued a challenge last week. He wanted a Louis Vuitton themed birthday cake for our mutual friends. They are brothers, both with birthdays the first week of August, and both with an undying obsession with Louis Vuitton. For those of you unfamiliar with this designer, the bags look like this:

Now, I'm not talented enough yet in the "sculpting" arena to make a bag-shaped cake. So I figured we would just have to settle for a square cake with the Louis Vuitton design imprinted.

To do this, I downloaded a desktop wallpaper with the Louis Vuitton design. Then I flipped the image (so it was mirror image). I printed that out and covered it with wax paper to pipe each of the designs using melted vanilla candy coating (white chocolate would have worked as well - possibly better).

I then made gold "paint" using edible gold lustre and lemon juice. A couple of notes about this. The instructions say you can use vanilla extract, lemon juice, or vodka. I thought vanilla extract made sense, because the candies were made with vanilla candy. NO. Bad choice. Obviously straight vanilla extract tastes gross and is very strong. That was a moment of braindead-ness for me. So, I switched to lemon and all was peachy keen. The painting took a very long time. If I were to do this again, I would really search in earnest for edible gold lustre SPRAY paint. I think that would be much more time efficient.

Anyway! So then I had the candies, made an 8-inch square red velvet cake, and iced it with chocolate buttercream frosting.

I modified my go-to lemon blueberry cupcake recipe to make a 2-tiered lemon cake. I didn't put blueberries in the batter, but instead used sugared blueberries between the layers.

Scrabble cake

One of Kate's good friends is having a Jack & Jill wedding shower today. Both the bride and groom are avid Scrabble players, and the theme for the shower is Trivia, so a Scrabble cake seemed particularly appropriate!

After frosting the entire cake, I used a ruler to measure out the 15 x 15 grid on this 12 inch square cake. Then, I used pearl dusting sugar and "painted" the colored squares. Then I used white frosting to pipe over the lines. The letter tiles are made from dark and white chocolate - I melted the chocolates and piped the letters on waxed paper ahead of time so they hardened into individual candies.

Can you tell what 7-letter word can be spelled using the extra tiles?

Alphabet block cake pops!

I made these alphabet block cake pops for a baby shower today. Sadly, I can't take credit for the idea, but I can take full credit for the execution! Thanks, Natalie, for such a great idea!

It is hard to tell with the glare on the wrappers, but the pops read "Congratulations," which is then followed by a moon + stars, a sun, and a red flower.

I am very pleased with how they turned out. I was somewhat concerned about them looking square enough, but I think they came out well!

Last-minute baby shower cake!

This weekend, I was lucky enough to have a last-minute baby shower cake order for a baby girl! I received the call on Sunday night for a Monday afternoon party, and was happy to make a chocolate cake with vanilla frosting. I'm really starting to love the argyle pattern for cakes, and think it is just perfect for a baby shower event (or any other cake really!). It requires more math than I anticipated, but I'm glad I thought about that ahead of time, or it would have turned out to be an argyle disaster!!

Like a dope, I didn't take any pictures of today's projects because I was running late. But...

Father's Day cake pops are now officially available at Parker & Otis in downtown Durham. There are Super Dad pops, #1 Dad coffee mug pops, and grill pops. Both vanilla and chocolate pops are available.

My realtor's son turns 5 today, and they asked me if I could do some dinosaur cake pops for his party. At first I couldn't figure out HOW I would do such a thing. Spherical dinosaurs? But after playing around with a couple of ideas (and with a lot of great input from my friends), I figured it out!

Cake update

So. Take 1 huge beautiful cake, add 1 broken Jeep, 1 semi-operating Cabrio, and 95-degree weather. You get a huge disaster and 1 broken heart.

After spending so much time and energy on THE cake (below), I was definitely nervous about transporting it. However, Sam has a Jeep, so I figured I would put the cake in a box, slide it into the trunk, keep the car well air-conditioned on the ride, and cross my fingers. All went as planned until we got about 20 miles from my house and Sam's car started shuddering and smelling like burned rubber. So, we turned around, went back to my house, and decided we should take my car.

There were a couple of problems with this idea. One is that a VW Cabrio is not really designed for cake transport. The trunk is very tiny. And does not have a wide enough opening to allow for the delicate and gentle transfer of a cake. The main problem, though, is that my air conditioner was broken, and I did not get it fixed last week, since I figured we were taking Sam's car to the beach...

So, step 1 was to get the cake INTO the trunk. But because I had to tilt the cake and because it weighed approximately 823109823 pounds, I nicked the icing on the side while getting it in. HUGE gash. Ok, no big deal... yet. I ran inside, grabbed a spatula and my extra icing, and did some quick repair.

Step 2 was figuring out how to keep the cake from melting. Unfortunately, there was really nothing we could do about this situation. So, we decided to drive quickly and cross our fingers.

Step 3 was figuring out how to keep ourselves from melting. Really, the only thing we could do there was drive with the top down. And at this point, we were already an hour and a half late (Sam also had to work that morning!), so we decided to just boogie.

Driving, driving, driving, and the whole time I'm freaking out about what is going on in my trunk. But there's nothing I can do about it, so I try to relax.

We get to Elizabeth City, open the trunk, and the cake is a disaster. A complete and utter mess. One of the roses in the back corner had jumped ship and slid all the way down the side of the bottom tier, pulling down the icing and tinting it pink. On the top tier, the whole back corner of icing was sliding off into a puddle of melt. It was just a complete mess. So what am I going to do? I contemplate throwing the entire cake away. Just trashing it. I was so embarrassed (though, thank goodness I was doing this as a FAVOR and not getting paid). But I pulled myself together (kind of) and slapped some extra icing on the corners, just so the cake itself wasn't showing through. All the piping obviously was destroyed, but at least the cake was hidden and at least I had taken pictures before the melt.

No one even noticed. No one even looked at the cake really. !?

But everyone said it tasted amazing, and most people thought it had come from a bakery.

Here are a few things I've learned:

If possible, I will freeze the cake before transport. However, I don't know if any cake would fit in my freezer, so that may not work so well.
I will not only bring extra icing and a spatula in the future, but I will also bring decorating bags and tips. I had no idea the whole sides would melt off. I really (stupidly) thought I would just be fixing up nicks from putting the cake in the trunk and taking it out.
I will bring extra roses. There are SEVEN extra roses in my fridge right now that I could have had with me in case of emergency.
When I bring the extra icing and roses, I will put them in a cooler with ice packs. I stupidly had the tupperware of icing sitting in the trunk with the cake, so it was really soft when I had to put it on the cake.

All in all... it was a rough weekend. But I'm just glad I took pictures before we left!! And I'm glad everyone enjoyed it, because that's really all that matters.

I just finished THE CAKE for 104. I can't actually believe I pulled this off. It's not perfect, but I'm darn pleased with it!!! I do wish, though, that I had not put orange zest into the frosting. It enhances the taste, but I don't love the little orange flecks all over the cake...

... I'm currently making a cake for 100. 104 to be precise.

It will (hopefully, assuming everything works as planned) be a 2-tier square cake, with the bottom tier 12 inches square by 4 inches high and the top tier 8 inches square by 4 inches high. I have never attempted such an endeavor, but here's hoping!

Art Walk treats

For the art walk, I wanted to class it up a little, but stick some Southern Charm in there. So, I made some Red Velvet Cake Truffles, using dark chocolate, milk chocolate, and white chocolate. This time, I used Scharffen Berger cocoa, as opposed to my usual Hershey's standby, and you can definitely tell the difference - it is totally worth the added cost! I will no more use Hershey's in my Red Velvet cakes!

In keeping with the Southern theme started with the Red Velvet idea, I also made mini Hummingbird Cupcakes with Orange Marmalade frosting. I will tell you - the frosting is my new favorite. You have to make sure you use GOOD marmalade though (rule of thumb: oranges, NOT sugar, should be the first ingredient listed), otherwise I'm sure it would be too sweet!

You should head over to the Durham Art Walk. The weather will be beautiful and there will be a lot of very talented artists displaying their work throughout downtown.

One such artist, Bruce Mitchell, is a dear friend of mine who has his studio in his beautiful home he recently renovated. You should definitely check out his work. I am lucky enough to have 2 Bruce Mitchell originals in my home (one is a painting OF my home!), and my mother has one of his cloud paintings as well!

The Art Walk is Saturday, April 18 from 10am-5pm and Sunday, April 19 from 1pm-5pm. Check it out! I will also be bringing some treats over for Bruce to serve at the studio.

Important cake news

I, in trying to be adventuresome, have offered to make the "wedding cake" for my boyfriend's mother and step father in 3 weeks. And "wedding cake" is in quotes because they actually got married last fall, and had a small reception, but are having a bigger party at the beach in late April. I'm not 100% sure why. Here's the tricky thing: Sam actually made the offer, but neglected to ask any of the important questions, such as, oh, how many people will be at the party, what kind of cake do you like, what kind of decorations, etc. So. I'm flying by the seat of my pants. Quite literally.

I'm thinking something very simple and elegant. What I would really like to do is do a simple white or ivory icing with maybe some cornelli lace (or something similar) and then cover the cake with edible flowers. I believe nasturtiums are edible, as well as pansies... I'm not sure what else. Or where to get them!!!

What I loved about the cake pops is that not only are they totally adorable, but they actually taste good! I find that a lot of the super cute baked goods are nice to look at, but not so nice to eat. With these, I got the best of both worlds.

I only hope the cupcakes turned out well. I usually make enough so I can try something before I give it away (to avert any disasters), but I only made just enough this time. I used my go-to lemon blueberry recipe, so I'm sure they were great, but you never know...
